Method
Simple Pancakes

Dry mixture

150g wholemeal flour or spelt or self raising

1 tsp baking powder
2-3 tsp cinnamon -
Wet mixture

2 eggs (vegan substitute)

200ml oat milk
-
1 banana mashed
-
2 drops vanilla extract
-
1 tbsp olive oil .

In a bowl add the flour, baking powder and cinnamon (dry mixture) and in a separate bowl add the 2 eggs, oat milk, banana mashed, vanilla extract and olive oil

Add 1 tbsp olive oil to a large, non-stick frying pan over a medium heat and allow this to warm up for 1-2minutes

Whilst this is warming up, mix the wet ingredients with the dry ingredients in one bowl

Add 2 spoon fulls of the batter per pancake and cook the pancakes for 1-2minutes on each side

Flip the pancakes over and cook for a further minute. Repeat this step until the batter is used

Serve with toppings of your choice as I used almond butter with a fruit compote that I make
