Fluffy Pancakes

150g whole meal flour
-
2 tbsp cinnamon

1 tsp baking powder
-
200ml almond milk
-
2 medium eggs or vegan egg substitute

1 tsp vanilla extract
-
Place flour, cinnamon powder and baking powder in a medium bowl

Warm the milk until its lukewarm (not hot)
-
Whisk the milk egg and vanilla extract together
-
Make a well in the center of the flour mixture
-
Pour the liquid in the center and mix until only small clumps of flour remain
-
Heat a large skillet over medium heat with 1sp olive oil, coconut or butter
-
Cook each side for 1-2mins and serve with toppings of your choices
