Blueberry Muffins 

     

  • 2 eggs 

  • 1/3 cup brown sugar

  • 1/4 cup olive oil

  • 1 tsp vanilla extract 

  • 1 tsp cinnamon

  • 1 tsp mixed spices

  • 1 1/2 cups spelt flour

  • 1 tsp baking powder

  • pinch of salt

  • 1 cup blueberries (I use frozen)

  1. Preheat oven to 200’c and line a muffin tin with muffin liners or muffin tins

  2. In a bowl, mix eggs, sugar, oil, vanilla extract, cinnamon, baking powder and salt

  3. Add the flour and mix all the ingredients together, add the blueberries and stir in 

  4. Using a spoon, fill the muffin liners/tins with 2 spoonfuls of the batter 

  5. Bake for 20minutes or until the muffins are fully baked. Remove and enjoy hot or allow to cool for 10minutes
