Method
Blueberry Muffins

2 eggs

1/3 cup brown sugar

1/4 cup olive oil
-
1 tsp vanilla extract
-
1 tsp cinnamon
-
1 tsp mixed spices
-
1 1/2 cups spelt flour
-
1 tsp baking powder
-
pinch of salt
-
1 cup blueberries (I use frozen)

Preheat oven to 200’c and line a muffin tin with muffin liners or muffin tins

In a bowl, mix eggs, sugar, oil, vanilla extract, cinnamon, baking powder and salt

Add the flour and mix all the ingredients together, add the blueberries and stir in
-
Using a spoon, fill the muffin liners/tins with 2 spoonfuls of the batter
-
Bake for 20minutes or until the muffins are fully baked. Remove and enjoy hot or allow to cool for 10minutes
