Simple Pancakes

Dry mixture

  • 150g wholemeal flour or spelt or self raising

  • 1 tsp baking powder
    2-3 tsp cinnamon 

  • Wet mixture

  • 2 eggs (vegan substitute)

  • 200ml oat milk

  • 1 banana mashed

  • 2 drops vanilla extract

  • 1 tbsp olive oil .

  1. In a bowl add the flour, baking powder and cinnamon (dry mixture) and in a separate bowl add the 2 eggs, oat milk, banana mashed, vanilla extract and olive oil

  2. Add 1 tbsp olive oil to a large, non-stick frying pan over a medium heat and allow this to warm up for 1-2minutes

  3. Whilst this is warming up, mix the wet ingredients with the dry ingredients in one bowl 

  4. Add 2 spoon fulls of the batter per pancake and cook the pancakes for 1-2minutes on each side

  5. Flip the pancakes over and cook for a further minute. Repeat this step until the batter is used

  6. Serve with toppings of your choice as I used almond butter with a fruit compote that I make
