Fluffy Pancakes

  • 150g whole meal flour

  • 2 tbsp cinnamon

  • 1 tsp baking powder

  • 200ml almond milk

  • 2 medium eggs or vegan egg substitute

  • 1 tsp vanilla extract

  1. Place flour, cinnamon powder and baking powder in a medium bowl 

  2. Warm the milk until its lukewarm (not hot)

  3. Whisk the milk egg and vanilla extract together 

  4. Make a well in the center of the flour mixture 

  5. Pour the liquid in the center and mix until only small clumps of flour remain 

  6. Heat a large skillet over medium heat with 1sp olive oil, coconut or butter 

  7. Cook each side for 1-2mins and serve with toppings of your choices
