Creamy Chickpea Pasta

  • 1/2 red onion sliced 

  • 2 garlic cloves (grinded)

  • 2 tbs olive oil 

  • 150 passata sauce 

  • Half a pack of oat cream 

  • 1 tsp pesto 

  • 1/2 tin of chickpeas

  • Black pepper, salt and basil to season

  1. Gently cook the red onion, garlic cloves with the olive oil for 3-4 minutes

  2. Whilst the onions are cooking, bring a pot of water to a boil. When the water comes to a boil add the pasta of your choice

  3. Once the onion and garlic have cooked, add the passata sauce, oat cream, pesto and chickpeas, season to your choice 

  4. Drain the pasta and add the sauce to the pasta until its fully covered

  5. Transfer the pasta to a baking tin and either add vegan cheese or just bake as it is for 10minutes until crispy

  6. Enjoy once its cooked or save for later
